From olive tree to jar: how we produce our table olives.

Herdade de Castros’ table olives follow a careful process that combines tradition, time, and natural control. Each fruit is treated with the same rigor that we dedicate to our olive oil, to guarantee the authentic flavor and perfect texture in every jar.

Fruit selection

Olives intended for consumption are harvested at the ideal point of ripeness, selected based on color, firmness, and fruit condition. Only the best move on to the transformation process.

Washing and calibration

After harvesting, the olives are washed and sorted by size and quality. This care ensures uniformity and an impeccable presentation in the final product.

Fermentation and natural curing

The olives are placed in tanks with brine, where they undergo a natural, controlled fermentation process. During this phase, salt, acidity, and pH levels are carefully adjusted, ensuring the perfect balance between flavor, texture, and preservation—without compromising the genuine character of the fruit.

Control and conservation

Throughout the process, the brine is regularly monitored to ensure the quality and stability of the product. Each batch is closely monitored until the olives reach the ideal point of flavor and firmness.
