The most anticipated moment of the year arrives. The olives are harvested at the perfect point and transformed into an extra virgin olive oil with an authentic flavor. It’s the culmination of months of dedication and care.
Winter — The Rest
After the harvest, the olive tree rests. The soil regenerates, and pruning is carried out to prepare the tree for a new cycle of life and production.
Spring — The Rebirth
